Traditionally vegetables have been pushed aside on the plate a veritable second class citizen.

 

Happily, many of us are growing personal gardens; markets are displaying an array of fresh seasonal offerings and our friends the vegetarians are opening our eyes to the nutritious value and importance of legumes!

 

Our former first lady, Michelle Obama said it best: "We can make a commitment to promote vegetables, on every part of every menu. We can make meal portion smaller and emphasize quality over quantity. And we can help create a culture - imagine this - where our kids ask for healthy options instead of resisting them."
