Tomatoes

April 21, 2018

Growing up I was a Daddy’s girl. We had so many things in common, both with over-the-top curious natures, a passion for reading, music and tomatoes!

Our favorite summer project was creating a huge garden, with the one and only vegetable we felt was needed, the red, luscious, meaty Jersey Tomato!  Ripe and warm from the summer sun we picked them off the vine and smushed the delicious fruit into our already watering mouth. My poor mother enjoyed but a few, since we were the first to ravage the garden in the morning.

We didn’t stop to wash them. We just gave them a little wipe on a cloth that my Dad hung near the vine, and we popped them into our mouths, juicy, and sweet, awakening our winter taste buds with the unmistakable flavor of the “red gold” of the East Coast.

As an adult, I’ve never been able to savor that taste again. Maybe it was being a little kid, sharing that special time with my father or as some say not having a “real” tomato since leaving N.J. and coming to the West Coast.

The western side of Washington where I live struggles with black rot thus not always very tasty tomatoes. There are some home-grown that are good, but sadly they never quite come up to New Jersey standard.

One of the things I am sure of is tomatoes are one the best and most delicious ways to get vitamins and minerals (A, C, Potassium, Folic Acid) into your body.

There are literally hundreds of ways to enjoy tomatoes and I'm pretty certain I've come close to enjoying most.

My personal favorites are a homemade marinara sauce, tomatoes on pizza, and of course, delicious tomatoes on a BLT sandwich on raisin bread.

Hot or cold tomatoes prepared with the right spices or blanketed between two pieces of brie cheese, with a few basil leaves tucked in on a crusty roll...now that is heaven!

We hope you find our “yummy” tomato recipes not only fun to make but amazing to eat and make part of your recipe memories. This month we share our adaptation of Melissa Clark’s Tomato Tarte Tatin.  Don’t be fooled by the number of steps. This recipe is easy!
